Chips for dinner

Because I’m healthy like that. I eat chips for dinner. Homemade potato chips, that is. And I love them.

It’s super easy, guys. OK. Gather your potatoes:

Slice them thinly. Thinly. As in, any larger than an 1/8th of an inch and you fail.

So there you go. Potatoes sliced. Lay them out on a cookie sheet and paint them with EVOO. Sprinkle on some adobo and some pepper. Flip them over and repeat.

Once your oven is preheated to 400 degrees, bake them for 15 minutes. At this point, some of the chips that you cut especially thinly will be done. Take them out of the oven, or they’ll scorch. The rest, flip over so that the other side can cook. Let them bake for another 5 minutes.

And there ya go. Potato chips for dinner! With a side of farmer’s market green beans :) Yum.
