Breakfast of champions

Breakfast is my favorite meal of the day. Most favorite. To the extent that I often make breakfast foods for other meals.

This morning, I had some BLUEBERRIES with breakfast. Handpicked. Tart. And oh so yummy. Thanks, Mama S!

I tend to fall into breakfast trends. In the winter, that trend is often oatmeal with a sliced banana, a big spoonful of peanut butter, cinnamon, and almonds (if I have them). I just can’t make myself eat a heavy breakfast in the summers. It’s too hot. So, I’ve started making eggs and toast with a handful of berries (or a banana or some watermelon) on the side. Carbs + Protein + Fruit = Perfect summer breakfast.

This is my favorite way to eat an egg. If you know what it’s called, please do let me know. There has been some debate as to the answer to that question.

Cut (or bite) a hole in the center of a piece of bread. Put in a non-stick frying pan. Break egg into the hole:

Allow to cook for a minute, then flip:

After the other side finishes cooking, flip onto a plate. Voila! I like leaving my yolk running for bread dipping purposes.

  1. I loooooove breakfast 🙂 anything sweet and fruity has my name all over it! Hand-picked berries sounds like fun too!

    • Hmm….interesting! It’s been awhile since I’ve seen that movie. I’ll have to refresh my memory. I’ll let you know if I figure out what it’s called 🙂
